Cajun Caleb Recipes

Cajun Caleb Shrimps™
Step 1 – Sprinkle 2 tablespoons Cajun Caleb™ spice on 5 pounds of shrimps then STEAM cook for about 6 minutes or when internal temperature reaches 150º F.
Step 2 – On a separate container, mix the steamed shrimps and Cajun Caleb™ sauce (Step 3). Mix well for about 1 minute then serve on a dish; garnish with limes cut-up in quarters.
Step 3–Cajun Caleb™ Sauce: Ingredients – 2 cups margarine, 1cup minced fresh garlic, 2 tablespoons fresh lime juice, and 2tablespoons Cajun Caleb™ spice. Directions –In medium heat, melt margarine in a pan. Add garlic; mix and simmer for 2 minutes. Add Cajun Caleb™ spice; mix and simmer for another 2 minutes. Finish by adding lime juice; mix and simmer for 1 minute then remove from heat.

Cajun Caleb Crawfish™
Step 1 – Sprinkle 2 tablespoons Cajun Caleb™ spice on 5 pounds of crawfish then STEAM cook for about 10 minutes.
Step 2 – On a separate container, mix the steamed crawfish and Cajun Caleb™ Sauce (Step 3). Mix well for about 1 minute then serve on a dish and garnish with limes cut-up in quarters.

Cajun Caleb Clams™
Step 1 – Sprinkle 2 tablespoons Cajun Caleb™ spice on 5 pounds of clams then STEAM cook until clams open.
Step 2 – On a separate container, mix the steamed clams and Cajun Caleb™ sauce (Step 3). Mix well for about 1 minute then serve on a dish and garnish with limes cut-up in quarters.
Step 3 – Cajun Caleb™ Sauce: Ingredients – 2 cups margarine, 1 cup minced fresh garlic, 2 tablespoons fresh lime juice, and 2 tablespoons Cajun Caleb™ spice. Cajun Caleb Crabs™
Step 1 – Sprinkle 2 tablespoons Cajun Caleb™ spice on 5 pounds of live crabs then STEAM cook for about 20 minutes.
Step 2 –Arrange the steamed crabs on a dish then pour Cajun Caleb™ Sauce (Step 3) all over it. Garnish with limes cut-up in quarters.

Cajun Caleb Lobsters™
Step 1 – Sprinkle 2 tablespoons Cajun Caleb™ spice on 5 pounds of live lobsters then STEAM cook for about 20 minutes.
Step 2 – Arrange the steamed lobsters on a dish then pour Cajun Caleb™ Sauce (Step 3) all over it. Garnish with limes cut-up in quarters.

Cajun Caleb™ Fish
Rub Cajun Caleb™ spice generously on fillets of fish, like salmon or bass. Leave for about 1 hour. On a separate dish, mix 4 parts olive oil and 1 part fresh lime juice. Dip fish on mixture then broil until done or when internal temperature reaches 150º F.

Cajun Caleb™ Spice as Salt or Pepper Substitute Simply substitute Caleb Spice for salt or pepper on most dishes.

Cajun Caleb™ Shrimp Tacos
Step 1 – Thaw if frozen. Sprinkle a generous amount of Cajun Caleb™ spice, coveringall shrimps and mixing very well. Leave for about 15 minutes. Steam until pink on both sides (do not overcook). Remove from heat. Set aside.
Step 2 –Taco Sauce: Combine in a bowl 1 cup Thousand Island dressing, ½ cup Mayonnaise, 1tablespoon Cajun Caleb™ spice. Mix well until sauce is smooth and spice evenly distributed.
Step 3 – Shrimp Taco Preparation: Heat Corn. Spread on Corn Tortilla a generous amount of Taco Sauce. Line-up about 4 shrimpsacross Corn Tortilla then add to top Onions, Cilantro, and Cabbage. Squeeze quartered lime, allowing juice to spread evenly on taco then serve.

CAJUN CALEB™ SAUCE

(Makes 5 Cups for About 10 Pounds of Shellfish)
Ingredients
1. Cajun Caleb™ Spice – 4 Tablespoons or 1 Pack Cajun Caleb Spice (1.8 ounces) (see picture; $5.00 at cajuncaleb.com)
2. Country Crock Original (no substitutes, if possible) margarine – 4 Cups (see picture; about $5 at Smart & Final stores)
3. Minced Fresh Garlic – 1.5 Cups
4. Fresh Lime Juice – 4 Tablespoons
Preparation
1. In a deep pan, cook 4 Cups of margarine until it simmers.
2. Add 1.5 Cups of minced fresh garlic. Simmer for 4 minutes.
3. Add 4 Tablespoons of Cajun Caleb™ Spice. Simmer for 4 minutes.
4. Add 4 Tablespoons of fresh lime juice. Simmer for 2 minutes.
5. Remove from heat. Set aside for mixing with shellfish.
Shellfish Suggestion
Any shellfish or combination of shellfish: Shrimp (Shell-on or Peeled), Lobster, Crawfish, Crab (Snow, King, Dungeness), Mussel, Clam.
Cooking: Steam until food temperature reaches 140 degrees Fahrenheit. (Do Not Boil; Do Not Overcook; If already cooked, steam up to 120 degrees only)
Serving Suggestion
In a deep bowl, mix shellfish and Cajun Caleb Sauce (for every 1 lb. of Shellfish ADD 1/2 Cup Cajun Caleb™ Sauce). Mix well then serve on a deep dish garnished with cut-up limes (cut-up whole lime into 8 pieces).
